Every summer we get a fresh wave of watermelon-themed desserts, and this miniature watermelon Oreo cake is easily one of the cutest entries yet. It's tiny, it's pink and green, and there's a wobbly honey jelly layer involved — basically everything we want from a hot-weather treat, scaled down to fit in one hand.
What we love about Mini Cakes' videos is how much personality gets packed into something the size of a cupcake — the watermelon rind piping, the crushed-Oreo "seeds," the jelly that jiggles just right when it's tapped. It's a small project with an outsized cute factor.
